Culinary Chef First, Pastry Chef second

Good afternoon :D 
Can you guys believe that Thanksgiving is two days away? It was just September. 

So I decided to share my TRUE culinary side with you guys. Most people know that primarily, I do Culinary with baking being my newest work. I never expected
that I'd be baking, nor did I think I could. But now that I am, I love it! So 
anyway, here's a rundown...

I started cooking when I was 4 and made home cooked dinners my priority at 10 years old lol. I was ecstatic to learn that I could go to school for this. When I was 14 I left high school to be home schooled and by 15 passed my GED courses at Temple Univ., which led to me snagging my Diploma after my 16th b-day. Later on that year it was off to Delaware and into college and the working world. Along the way, I've learned from and worked with some of the besssst Chefs while gaining a lot of wonderful experience. I've also been blessed to capture some great pics, which I'm going to share of course :D

So, if it was Burger King and I could have it my way all day, here's what I'm planning on doing. Become a Certified Personal Chef, Food Critic, and Owner/Executive Chef. I'll open a bakeshop first and extend it into a Cafe. Then, own a beautiful restaurant with Haute Cuisine. I'd like to have at least three of them throughout the country. Aw man I'd love a West Indian restaurant too. UGH. So much to do. My quote has always been "DREAM CRAZY". My dreams may sound crazy to someone but to me anything is reachable :D "Do it big or don't do it at all"- I love that one too, a little aggressive but it gets the point across lol. First Vendor Experience

       :) :) :) If I could write out a hundred smileys I would. :D It was great. I literally was making cupcakes up until the last second. Which made us a little late but we still made it. My table looked exactly like I'd been planning it in my mind lol. Everyone was sooooo nice, it was a wonderful environment and the other tables were gorgeous!! I sat down and looked around at all of the other tables while trying to restrain myself from getting up and buying stuff. Of course I was a little nervous at first, but the second I walked in it felt warm and had a great energy. I had a nice little variety. I made a little over a dozen of the Coconut Couture, Candy Apple *which sold out*, Haute Chocolate, Honey Suckle, and Ooh La la lemon. I also made a few key lime pies, strawberry shortcakes and tins of Spritz cookies with blackberry jam in the middle. So, of course at least one slightly disastrous thing had to happen, and what better than the cakes falling over :). Something told me that would happen, and as a Chef, you must have a back-up plan. So, of course I packed my brand new cake slicer ;) and the church aka: Ms.Amber Luckey ;) provided me with a few plates to help me out. 

A big plus was knowing that my mom was right across the room selling her beautiful handmade jewelry LOOK LOOK! Her table was beautiful, very classy and simple. She had a lot fun as well. We met a lot of nice people, and definitely hope to see them again.

I wasn't able to take a picture from the front, plus these were taken on a cell phone, but
the table was beautiful :D So I also found a great recipe for an eggless
cake that one of my friends needed. I made that into a strawberry shortcake. It 
tasted just like any other really good vanilla cake you'd cake.

      The new, thought of and created last night... EGG NOG Cupcake ::whistles and cheers:: See, I told you all when I get in the Holiday Spirit, I get in hard! lol. If you could put holiday spirit in a cup and drink it, guess'd taste like EGG NOG! As you can already probably tell, I absolutely LOVE egg nog. When I see it in the market (especially for the first time of the year) I pass it, do a double take and walk backwards. It's like my body's taken over, if I don't get it, I have to at least touch the carton. So, for the cake, I added a little less sugar, and egg nog of course, but not too much. The frosting is the best part, the first bite screams eggg nooogg! The only thing I might do different, is add a pinch of kosher salt to counter balance the sweetness. Of course what better to top it off than a sprinkle of nutmeg. Can you picture this in a mug?

In about a week there's this really cool event happening in Newport,DE to raise money for the new soup kitchen at St. James Episcopal Church. It's a Ladies Shopping Night, where you can bring your old jewelry and cash it in. There will be plenty of vendors including myself.  Barbadian Plain Cake
 Key Lime Pie

*This week I made a few Barbadian Plain Cakes. I decided to make this cake to see if
I could come close to the cakes my great grandmother from Barbados. I'll know
this weekend after my dad tries one. It's a cross between a pound cake
and regular yellow cake. I added a hint of coconut extract, instead of the almond
extract the recipe calls for. I think it's one of the best cakes I've had, but it may be
an acquired taste.*

October update

So based on how many birthday cakes I've made in the month of October, I can say, a big CHUNK of my family and friends are Libra's or Scorpio's. Pretty cool. 

Any who, this month has to have been the biggest so far, which of course is a blessing. This was  seriously a cake month, I've barely made any cupcakes. Because of that, I've stepped up a few notches in the talent'll see why lol. Yes it can be easy to say "I'm sorry I can't do that" but of course how will you know when you've never tried. That pretty much goes with life in general. I always say, never sell yourself short, you're capable of doing anything you please. Make it happen. BAM! That's it lol. Life is about building yourself, so I try not to stay on the same step for too long- after all if I do I won't get very far. So with that said, at times, I dream a little cupcake dream. Where the fairy of all things sweet cradles me in its fluffy frosting and tosses me through a door made of hard sugar. Yes it may sound a little painful but man that dream is exciting. Well guys, one of my dreams were to one day do a wedding. I didn't expect it to happen so soon but I was excited when it did. Luckily it wasn't too much, 8 dozen. Not bad at all. I could definitely make that happen. So the day before from 3pm- 9pm I created the 96 cupcakes. It was a lot of fun. It took me back to my old Banquet days lol. So early the next day we got prepared to deliver the cakes to the venue. Of course we wore the t-shirts. 
I think me wearing a chef coat to deliver cupcakes would be over kill (my personal opinion). The venue was beauutiful, very eloquent and the cupcakes were a perfect touch. So thanks and Congrats to the new family.

We had a lot of fun that afternoon and hope to have many more catering events like this one. Hey. did I tell you guys I've been making some great pumpkin rolls!? They're really good. I'm still searching for the perfect recipe. The whole rolling thing gets a little crazy so I might end up making them into bars. Alright, this is going to be long so I'll get straight to the pics.

Internet/Blog Special

So, FINALLY I can reveal what has been my work in progress for the past couple of CARAMEL APPLE CUPCAKE!! It's a vanilla cupcake with chunks of apple and a hint of cinnamon. To top it off is a layer of caramel and chopped peanuts. Just like a caramel apple, it's got the small wooden stick in the middle. Honestly, I didn't think it'd taste as good as it looked but I'm happy to say I was wrong.  So, because I can't add the Caramel Apple Cupcake to the flyer just yet, I'll add it to the order form along with the Pumpkin Spice cupcake. I'm also creating a special Halloween cupcake called Reeshy Cup! LOL! Original right? Reeshy Cups was actually a nickname of mine growing up, so I decided to make it a play on the Reeses Cups that I love so much. I'd like it to be a rich chocolate cake topped with peanut butter and a solid layer of chocolate. Sound Good?

Also, I finally have a business card. I've officially reached the plateau of Greatness!! (somewhat, not really). But, it's pretty amazing. That was something I always hoped to be able to say "Oh, let me give you my card" :D So don't be surprised if when you see me, one of the first things to blurt out of my mouth is "OH HERE TAKE MY CARD!" lol. I'm not even going to mention the T-SHIRTS I now have!!!!!! yaaaayyyyy. HAPPY HAPPY JOY JOY. I have shirts to match the cards haha! I figured, wearing a chef jacket would be a little too much, I need a shirt. So I got one... and now, I'm happy.
One last thing. Because the Holidays are the most hectic time of year, I did plan on making pies. Pies to me, are just as important as the turkey. So I'll be making whatever pies you throw my way lol. I also promised myself while taking my baking course, that If I did start a small baking business I'd make the struesal apple pie that I made in class. I'm not big on apple pies, but this was the BEST apple pie I've ever had in my life, and the topping was amazing. So yes I'm very excited about that. As always here are some pics.

Okay, so, crazy news. I wasn't sure if anyone's actually been checking out this little blog I've been doing, UNTIL I found out how to read my stats!

Those numbers represent the amount of people that have viewed the site, and the location. See what I mean, that's crazy cool! Sri Lanka and Hong Kong?? Croatia, Brazil and Sweden, WHOA. I'm sure that a good CHUNK of those views are my own. But, I definitely wasn't in the Netherlands yesterday. So I'd just loooove to say THANKSS EVERYONE FOR CHECKING OUT MY BLOG!!!! Even if by accident lol. That's amazing and incredibly inspiring....almost inspiring enough to make a cupcake of the WORLDDD!!!!.....Ok not really, but do you feel the joy that it brings me =) . Is it Fall yet?

So... I'm sitting on the couch eating my third caramel apple feeling somewhat guilty, BUT remembering that it's still fruit, so its okay :). I start thinking to myself "Wow self, you really love caramel apples, the combination of apples. caramel and peanuts are just crazy, you need to start making your own". Which led to the light bulb turning on over my head. "Marisha, you should make a caramel apple cupcake. WHOA! Good ideas sometimes come while watching mindless tv *Jersey Shore* (I have no idea why I like that show by the way). So yes, I want to make a caramel apple cupcake. A home-made caramel filling...topped with nuts...I have no clue. But, I'm going to make it work, so I'm excited.

Fall is so inspirational, I can just imagine what type of menu I'll have when I open a restaurant. Menu planning really is a past-time for me, I just have to try not to get too ahead of myself. If it were up to me I'd have a different cupcake everyday lol. Just wait 'til I unleash my PUMPKIN SPICE cake OHH I'm so excited. Whew...I couldn't control that. Speaking of a different cupcake, I added "Retro Ribbons" to the list of Fab Flavors, which is a chocolate and peanut butter swirl cupcake. I'll be able to compete with Baskin Robbins 33 flavors in no time.

So, in other news I'm working on my website. I'm designing it myself so I won't be able to
have it up and running over night, but I'm hopeful it will be done soon. But for now the blog spot is GREAT. It was cool to google myself and see this blog pop up. So whenever you forget the link

Something New

So, I'm excited. I wanted to do a different "line" of cupcakes or something to add to the list of couture creations. What better than cheesecake! One of my favorite desserts in the world, and these are just as tasty as anything I've had at a restaurant, but cuter. I'm coming up with different toppings and flavors. If you have a favorite flavor you'd like to try, let me know and I'll try it out. So far, my favorites are the lemon and coconut, but I'm doing, lime, cherry, blueberry, and strawberry as well. I chose to do a Nilla wafer crust instead of graham cracker, but to have the crust is optional. I personally like it better without. These were a few of the samples I made (lemon and cherry), not bad right?

In other news my Grandmother just celebrated her birthday, and I'm sure you can guess who made the cake :D It's rare that I get to try the cakes I make...I've only tried one besides this one. It was sooooooooo good. I honestly couldn't believe I made, that's crazy to me. Its a coconut cake with pineapple. SO GOOD.

We had a great time, and came across what I think would be the best little CUPCAKE STORE!
That was kind of a "drive n snap" type of picture. I was taking this from the car, but I definitely see potential. The colors are there, of course it'd have to be spruced up....but it is for sale. Only problem, it's in Maryland, and...I imagine my first bake shop and restaurant to be in Philadelphia.

So as I dream off and imagine the big cupcake fairy knocking on my door and flying me away to stardom, I'll leave you guys with a few pics of what I've done these past couple of weeks.
