To celebrate the coming of Spring, I decided to make pastel parfaits. This parfait is made with layers of homemade strawberry lemonade gelatin and no-bake cheesecake! It's so refreshing and even better...it's LOW CARB. Perfect for those on a ketogenic or paleo diet. But don't worry, I'll have both the low carb and regular recipes down below.

I mentioned 1/4 c erythritol in the video but needed to add a touch more. The recipe below has the updated amounts.
Cheesecake Recipe:
1/2 c boiling water
8 oz. softened cream cheese
zest of 1 lemon and 1 lime
Juice of 1/2 lemon
1/3 c powdered erythritol or 1/2 c powdered sugar
1/2 tsp lemon extract
1 1/2 tsp gelatin powder
gel food colors
Jello Recipe:
1 C of diluted lemon juice (OR 3/4 C water + 1/4 c fresh lemon juice)
1 tbsp gelatin powder
1/4 C chopped strawberries
1/3 c erythritol OR 1/2 c sugar (make sure to taste before setting)
3/4 c boiling water
juice of 1 lime
